Heat oven to 400°F. Lay the 1/2 head garlic on its side. With sharp knife, cut the tips from the cloves, exposing the garlic cloves. Wrap in foil. Bake 35 to 40 minutes or until garlic is soft. Cool 10 minutes. Squeeze garlic into small bowl. Spread garlic pulp over the split pita rounds; spray with cooking spray. Cut each round into 8 wedges. Sprinkle with salt and pepper. Place on large cookie sheet. Bake 7 to 8 minutes or until golden brown and crisp. Set aside to cool.
In food processor, combine all dip ingredients. Cover; process 30 to 45 seconds or until smooth. Stop processor and scrape sides once if necessary. Cover and continue processing. Serve with garlic chips.
Tip: For a quick appetizer, prepare the dip and serve it with purchased pita chips or tortilla chips.
