  • 4 slices bacon, chopped
  • 1 (15.5oz) can S&W® Pinto Beans (drained, rinsed)
  • 1/3 cup taco sauce
  • 6 oz tortilla chips
  • 2 cups (8oz) shredded Mexican cheese blend
  • 2 cups loosely packed finely shredded lettuce
  • 2 green onions, sliced
  • 1 large Roma tomato, seeded, diced
  • 1/4 cup sliced ripe olives
  • 1/4 cup sour cream

Ingredients

  • 4 slices bacon, chopped
  • 1 (15.5oz) can S&W® Pinto Beans (drained, rinsed)
  • 1/3 cup taco sauce
  • 6 oz tortilla chips
  • 2 cups (8oz) shredded Mexican cheese blend
  • 2 cups loosely packed finely shredded lettuce
  • 2 green onions, sliced
  • 1 large Roma tomato, seeded, diced
  • 1/4 cup sliced ripe olives
  • 1/4 cup sour cream

Directions

In medium skillet, cook bacon over medium heat 6 to 8 minutes or until crisp, stirring frequently. With slotted spoon, remove to small bowl; sed aside. Discard bacon drippings. In same skillet, cook beans and taco sauce 2 to 3 minutes or until hot.

On one of 2 large microwavable plates, spread ¼ of the tortilla chips; top with ¼ of the cheese. Repeat layer. Microwave 45 to 60 seconds or until cheese is melted. Top with ½ of the beans, and ½ of the reserved bacon. Microwave 15 to 20 seconds to heat thoroughly. Top with half of the lettuce, green onions, tomato, olives and sour cream. Serve immediately. To prepare a second plate of nachos, repeat above directions.
