Ingredients

  • 4 cups 3/4-inch cubed Italian or sourdough bread (5oz)
  • 1/3 cup extra virgin olive oil
  • 2 large garlic cloves, grated or finely chopped
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15.5oz) can S&W® Cannellini Beans (drained, rinsed)
  • OR 1 (15.5oz) can S&W® White Beans (drained, rinsed)
  • 2 large tomatoes, coarsely chopped (2 cups)
  • 1/2 large cucumber, peeled, coarsely chopped (1 cup)
  • 1/2 cup firmly packed fresh basil leaves, chopped
  • 1/4 cup chopped onion

Ingredients

  • 4 cups 3/4-inch cubed Italian or sourdough bread (5oz)
  • 1/3 cup extra virgin olive oil

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15.5oz) can S&W® Cannellini Beans (drained, rinsed)
  • OR 1 (15.5oz) can S&W® White Beans (drained, rinsed)
  • 2 large tomatoes, coarsely chopped (2 cups)
  • 1/2 large cucumber, peeled, coarsely chopped (1 cup)
  • 1/2 cup firmly packed fresh basil leaves, chopped
  • 1/4 cup chopped onion

Directions

Heat oven to 375°F. Place bread cubes on ungreased 15×10-inch pan with sides. In large bowl, beat olive oil and garlic with wire whisk until well blended. Drizzle about 4 teaspoons of the mixture over the bread cubes, tossing to coat. Set remaining mixture aside. Bake bread cubes 10 minutes or until lightly toasted, stirring once.

Meanwhile, add vinegar, salt and pepper to remaining olive oil mixture; beat with wire whisk until well blended. Add all remaining ingredients; toss to coat. Fold in toasted bread cubes. Serve immediately, or let stand 15 minutes to blend flavors.

Tips: This is a great way to use leftover firm bakery bread. Make this fresh salad when tomatoes are plentiful and bursting with flavor. It’s a great accompaniment to grilled chicken.
You can toast the bread cubes a day or 2 ahead of time.
This could also be served as a main lunch salad for about 4 people.
