In food processor, place all ingredients except coconut. Cover; process 30 to 60 seconds or until desired texture. Place in serving bowl. Cover; refrigerate 1 hour. Top with coconut just before serving.
Tip: Replace the can of sweet potatoes with two mashed sweet potatoes; microwave two sweet potatoes for 6-8 minutes, scoop out filling and mash.
