In large bowl, beat all dressing ingredients with wire whisk until well blended. Stir beans into dressing; let stand 10 minutes to blend flavors. Stir in tomatoes, cucumber, onion and parsley. Just before serving, gently fold in cheese.
Serving Suggestions: Serve as a main dish salad with warm pita bread.
For a first coarse salad or appetizer, serve smaller portions with wedges of pita bread or crisp pita chips.
If your family isn’t fond of Feta cheese, omit the cheese and top the salads with dollops of yogurt or sour cream.
