Ingredients

  • 1/2 pound double smoked sliced bacon, chopped
  • 2 medium onions, chopped (1 & 1/2 cups)
  • 2 medium carrots, peeled if desired, thinly sliced (1 cup)
  • 1 pound lean ground beef
  • 2 green bell peppers, chopped
  • 3 garlic cloves, finely chopped
  • 2 chipotle chiles in adobo sauce, seeds removed, chopped (from 7oz can)
  • 2 tablespoons chili powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano leaves
  • 1 to 2 teaspoons crushed red pepper flakes
  • 2 (15.5oz) cans S&W® Kidney Beans (drained, rinsed)
  • 1 (15oz) can tomato sauce
  • 1 & 3/4 cups 50% less sodium beef broth (from 1-quart container)
  • 2 tablespoons semisweet chocolate chips
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar

  • 2 chipotle chiles in adobo sauce, seeds removed, chopped (from 7oz can)
  • 2 tablespoons chili powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano leaves
  • 1 to 2 teaspoons crushed red pepper flakes
  • 2 (15.5oz) cans S&W® Kidney Beans (drained, rinsed)
  • 1 (15oz) can tomato sauce
  • 1 & 3/4 cups 50% less sodium beef broth (from 1-quart container)
  • 2 tablespoons semisweet chocolate chips
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar

Directions

In deep 12-inch skillet or medium Dutch oven, cook bacon over medium-high heat 6 to 8 minutes or until crisp, stirring occasionally. Remove from skillet with slotted spoon. Discard all but 3 tablespoons drippings. Add onions and carrots to skillet. Cook 8 minutes or until slightly tender. Add ground beef, bell pepper, garlic, chipotle chiles and all spices. Cook 5 to 8 minutes or until ground beef is no longer pink and vegetables are tender. Add bacon and all remaining ingredients. Bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally.

Serving Suggestion: Garnish with parsley. Serve with coleslaw and cornbread.

Tip: When reheating leftovers, you might need to add a little more broth or water.
