Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped (about 1 cup)
  • 1 tablespoon chopped garlic from a jar (or 3 large cloves, chopped)
  • 2 cups water
  • 1 cup salsa
  • 3 (15oz) cans S&W® Black Beans (drained, rinsed)
  • 1/2 to 1 teaspoon chipotle chili powder
  • 1 tablespoon fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup shredded Monterey Jack cheese (2oz)
  • Tortilla chips

Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped (about 1 cup)
  • 1 tablespoon chopped garlic from a jar (or 3 large cloves, chopped)
  • 2 cups water
  • 1 cup salsa
  • 3 (15oz) cans S&W® Black Beans (drained, rinsed)
  • 1/2 to 1 teaspoon chipotle chili powder
  • 1 tablespoon fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup shredded Monterey Jack cheese (2oz)
  • Tortilla chips

Directions

In 4-quart saucepan, heat oil over medium-high heat. Stir in onion; cook 3 minutes. Stir in garlic; cook 1 minute longer. Stir in water, salsa, beans and chipotle chili powder; bring to a boil. Reduce heat. Place 3 cups of the bean mixture in food processor or blender container. Cover; process 30 seconds or until smooth. Return to saucepan. Stir in lime juice; simmer 10 minutes. Remove from heat; stir in cilantro. Top each serving with cheese and additional cilantro, if desired. Serve with tortilla chips.

Tip: You can use regular chili powder if you prefer, but the chipotle chili powder adds a slight smoky flavor.
