Ingredients

  • 2 (15.5oz) cans S&W® White Beans (drained, rinsed)
  • 1 (14oz) can small artichoke hearts (drained, rinsed, quartered)
  • 1 (14.5oz) can diced tomatoes with roasted garlic (do not drain)
  • 1 teaspoon grated lemon peel or 2 teaspoons lemon juice
  • 2 teaspoons dried sage leaves, divided
  • 2 (16oz each) pork tenderloins
  • 2 large garlic cloves, cut in thin slivers
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil

Ingredients

  • 1 (14oz) can small artichoke hearts (drained, rinsed, quartered)
  • 1 (14.5oz) can diced tomatoes with roasted garlic (do not drain)
  • 1 teaspoon grated lemon peel or 2 teaspoons lemon juice
  • 2 teaspoons dried sage leaves, divided
  • 2 (16oz each) pork tenderloins
  • 2 large garlic cloves, cut in thin slivers

Directions

Heat oven to 425°F. Spray 13×9-inch (3-quart) baking dish with cooking spray. Layer beans, artichokes and tomatoes in dish. Sprinkle with lemon peel and 1 teaspoon of the sage. With small sharp knife, cut slits in tenderloins. Insert garlic slivers. Place over beans. Sprinkle with remaining sage, pepper and olive oil. Bake 40 minutes or until pork is no longer pink in center and thermometer inserted in center reads 145°F. Remove pork to cutting board; let stand for 5 minutes. Spoon bean mixture onto serving platter. Slice pork and place over beans.
