In 12-inch nonstick skillet, heat oil over medium-low heat. Add onion; cook 5 minutes. Stir in garlic, ginger root, coriander, cumin, salt, turmeric and pepper flakes. Cook 1 minute, stirring constantly. Stir in eggplant until well coated with spices. Cook 1 minute. Stir in tomatoes, beans and water. Bring to a boil; reduce heat. Cover; cook 15 minutes or until eggplant is tender, stirring occasionally. Uncover; cook 3 to 5 minutes or until liquid is absorbed.
Serving Suggestions: Serve this flavorful dish over hot cooked rice or orzo. Top individual servings with a dollop of plain Greek yogurt.
Tip: For variation in flavor, substitute coconut milk for the water.
