Heat oven to 400°F. Spray 12 regular muffin cups with cooking spray, or line with paper cups and spray paper cups.
In food processor or blender, process beans and milk 15 to 20 seconds or until smooth. Add egg whites and oil. Cover; process 5 seconds or until well mixed.
In medium bowl, mix all remaining ingredients by hand until well blended. Pour bean mixture over dry ingredients. Mix gently only until dry ingredients are moistened. Spoon about 1/4 cup batter into each muffin cup, filling 3/4 full.
Bake 15 minutes or until golden brown and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan. Serve warm or cool.
Tip: A regular ice cream scoop works well for filling the muffin cups with batter. It’s even easier if you spray the scoop first with cooking spray.
