Ingredients

  • 8 eggs
  • 2 tablespoons water
  • 1 jalapeno chili, ribs and seeds removed, finely chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon butter
  • 6 10-inch flour tortillas
  • 1 cup (4oz) shredded Monterey Jack cheese
  • 1 (15.5oz) can S&W® Pinto Beans (drained, rinsed)
  • 3 green onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup salsa
  • 1/2 cup light sour cream
  • 3 cups loosely packed shredded iceberg lettuce

Ingredients

  • 8 eggs
  • 2 tablespoons water
  • 1 jalapeno chili, ribs and seeds removed, finely chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon butter
  • 6 10-inch flour tortillas
  • 1 cup (4oz) shredded Monterey Jack cheese
  • 1 (15.5oz) can S&W® Pinto Beans (drained, rinsed)
  • 3 green onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup salsa
  • 1/2 cup light sour cream
  • 3 cups loosely packed shredded iceberg lettuce

Directions

In large bowl, whisk eggs, water, jalapeno, salt and pepper until mixed. In 12-inch nonstick skillet, melt butter over medium heat. Add egg mixture. Cook 5 minutes or until eggs are set but still moist, stirring and turning over 2 or 3 times.

Meanwhile, place 3 of the tortillas on microwavable plate. Cover with damp paper towel. Microwave on High 45 to 60 seconds or until warm. Set aside. Repeat with remaining tortillas. Spoon eggs evenly on lower half of each tortilla. Top evenly with cheese, beans, onions, cilantro, salsa, sour cream and lettuce. Fold in sides of tortillas. Roll up tightly. Cut in half crosswise.

Tips: Have all of the burrito toppings ready before you heat the tortillas. That way you can work quickly to fill the warm tortillas before they cool off.

You can use any of your favorite beans for this recipe. Try black beans or red beans.

You can heat the tortillas as directed on the package – in a large skillet or in the oven – if you prefer.

Servings Suggestion: Serve with additional salsa and sour cream.
