Ingredients

  • 4 large eggs
  • 6 strips bacon, chopped
  • 1 package (8 to 9oz) chopped romaine or baby lettuce
  • 1/2 cup vinaigrette dressing, divided
  • 2 (15oz) cans S&W® Yellow Eye Beans (drained, rinsed)
  • 1 cup halved cherry or grape tomatoes
  • 1 avocado, peeled, thinly sliced
  • 1/2 cup blue cheese crumbles
  • 1/2 cup loosely packed finely slivered red onion
  • Salt and pepper, if desired

Ingredients

  • 4 large eggs
  • 6 strips bacon, chopped
  • 1 package (8 to 9oz) chopped romaine or baby lettuce
  • 1/2 cup vinaigrette dressing, divided
  • 2 (15oz) cans S&W® Yellow Eye Beans (drained, rinsed)
  • 1 cup halved cherry or grape tomatoes
  • 1 avocado, peeled, thinly sliced
  • 1/2 cup blue cheese crumbles
  • 1/2 cup loosely packed finely slivered red onion
  • Salt and pepper, if desired

Directions

Place eggs in single layer in small saucepan. Fill with cold water to cover by 1 inch. Bring to a boil. Cover; remove from heat and let stand 14 minutes. Immediately drain and place in bowl of ice water. Let stand 5 minutes to cool. Meanwhile, in medium skillet, cook bacon over medium heat 5 to 7 minutes or until crisp, stirring frequently. With slotted spoon, remove to small bowl; set aside. When eggs are cool, peel and cut lengthwise into quarters.

To assemble, on each of 4 large plates, divide greens evenly. Drizzle each with 1 tablespoon of the dressing. Divide all ingredients evenly on top of greens. Pass remaining vinaigrette to drizzle over salads. Season each salad with a sprinkle of salt and grind of pepper, if desired.

Tips: If you don’t care for blue cheese, substitute diced gruyere, muenster or Cheddar cheese instead.

To save prep time, purchase already cooked and peeled eggs at the grocery store deli department. You can also purchase cooked bacon pieces in packages near the salad dressings.

For a vegetarian version, omit the bacon. You could substitute a smoked nonmeat salad topping bits.
