  • 2 (15.5oz) cans S&W® Chili Beans, Low Sodium (do not drain)
  • 1 & 1/2 cups reduced fat shredded Mexican cheese blend (divided)
  • 4 cups frozen potato nuggets (1/2 of 32oz package)
  • 2 green onions, sliced

Ingredients

  • 1 pound lean ground turkey
  • 2 (15.5oz) cans S&W® Chili Beans, Low Sodium (do not drain)
  • 1 & 1/2 cups reduced fat shredded Mexican cheese blend (divided)
  • 4 cups frozen potato nuggets (1/2 of 32oz package)
  • 2 green onions, sliced

Directions

Heat oven to 375°F. Spray 9×13-inch baking dish with cooking spray; set aside.

In 12-inch nonstick skillet, cook ground turkey over medium-high heat 5-7 minutes until no longer pink, stirring to break up ground turkey. Stir in chili beans. Bring to a boil. Reduce heat and simmer 5 minutes until slightly thickened, stirring occasionally.
Spoon turkey mixture into baking dish. Sprinkle with ½ cup cheese. Arrange potatoes evenly over top. Bake 20 minutes until heated through. Sprinkle with remaining cheese during last 2 minutes of baking time. Remove from oven and sprinkle with green onion.

Serving Suggestion:
This is a kid friendly dish that is a new twist on an old favorite. Individual servings can be topped with sour cream, lettuce and chopped tomato if desired.
