In large skillet, cook bacon over medium-high heat 5 minutes or until starting to crisp. Stir in onion. Cook and stir 3 minutes. Reduce heat to medium-low. Stir in garlic, poblano, red and yellow bell pepper. Cook 5 minutes or until tender, stirring occasionally. Stir in ketchup, brown sugar and chili powder. Cook 2 minutes. Stir in beans. Cook until bubbly and thoroughly heated. Remove from heat; stir in cilantro.
Tips: If your family isn’t a fan of cilantro, you can substitute chopped parsley for the cilantro.
For a vegetarian version, omit the bacon and cook the vegetables in 2 tablespoons of vegetable oil.
