Heat oven to 350°F. Spray 2 to 2 1/2-quart casserole or baking dish with cooking spray. In medium skillet, cook salt pork over medium heat 5 to 6 minutes or until lightly browned, stirring occasionally. Add onion; cook 5 minutes or until starting to soften, stirring occasionally. Stir in brown sugar, molasses and mustard. In large bowl, mix onion mixture and beans. Spoon into casserole. Bake uncovered 30 to 35 minutes or until bubbly and thoroughly heated, stirring once during baking.
Tip: You can substitute unsmoked or regular bacon for the salt pork.
