  • 8 strips bacon, chopped
  • 1/4 cup cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 large (9-10”) soft flour tortillas, room temperature
  • 1 (15oz) can S&W® Jacob's Cattle Beans (drained, rinsed)
  • 2 small Roma tomatoes, seeded, diced
  • 1/4 lb thinly sliced deli roast turkey
  • 8 small leaves butter or leaf lettuce, well dried

Ingredients

  • 8 strips bacon, chopped
  • 1/4 cup cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 large (9-10”) soft flour tortillas, room temperature
  • 1 (15oz) can S&W® Jacob's Cattle Beans (drained, rinsed)
  • 2 small Roma tomatoes, seeded, diced
  • 1/4 lb thinly sliced deli roast turkey
  • 8 small leaves butter or leaf lettuce, well dried

Directions

In medium skillet, cook bacon over medium heat 6 to 8 minutes or until crisp, stirring frequently. Drain; set aside. In small bowl, mix cream cheese, mayonnaise and mustard. Spread evenly over tortillas, covering entirely. In same bowl, slightly mash some of the beans. Spread over cream cheese to within 2 inches of top edge. Top evenly with reserved bacon and tomatoes. Layer with turkey and lettuce leaves, pressing down, leaving top 2 inches with only cream cheese. Beginning at bottom, roll up tightly. Wrap tightly in waxed paper or plastic wrap. Refrigerate 1 hour or up to 24 hours. Trim uneven sides. Cut each roll in 10 pinwheels, about ¾ inch each.

Tip: To help lettuce lay flat, remove any thicker rib down middle of each leaf.
