Over 15g of Protein
Pour beans into bowl and mash coarsely with a fork or potato masher. Spoon about 1/4 cup of the beans on one half of one tortilla. Top with 1/4 cup cheese. Fold over and press together. Repeat with remaining tortillas, beans and cheese. Lightly brush oil on both sides of 2 quesadillas. Cook in large skillet over medium-high heat until both sides are browned and crisp. Remove to cutting board. Repeat with remaining 4 quesadillas. Cut each into 4 wedges and serve with salsa, lettuce, sour cream and tomato.
Tip: You can use your favorite toppings for these quesadillas – guacamole or fresh avocado or black olives.
