Red-Red Bean Spread

Makes 1.5 Cups | PREP TIME: 5 minutes, COOK TIME: 15 minutes

Ingredients:
1 (15.25 oz.) can S&W® Red Kidney Beans, rinsed and drained
2 red bell peppers, or a 1/2 cup (8 oz.) canned peppers
1 tablespoon tomato paste
1/2 teaspoon salt
1/2 teaspoon grated lemon rind
1/2 teaspoon fresh lemon juice
1/4 teaspoon freshly ground black pepper
Dash of cayenne pepper
Salt to taste
Preparation:
Preheat broiler.

Cut bell pepper in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 10 minutes or until blackened.

Place in a zip-top plastic bag; seal and let stand 5 minutes.

Peel and chop, place bell peppers and remaining ingredients in a food processor, and process until smooth.
