Ingredients

  • 1 (15oz) can S&W® Black Beans (drained, rinsed)
  • 1/3 cup salsa
  • 1 tablespoon vegetable oil
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced onion
  • 6 eggs
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 8-inch soft flour tortillas, warmed
  • 1 cup shredded Mexican cheese blend (4oz)

Ingredients

  • 1 (15oz) can S&W® Black Beans (drained, rinsed)
  • 1/3 cup salsa
  • 1 tablespoon vegetable oil
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced onion

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 8-inch soft flour tortillas, warmed
  • 1 cup shredded Mexican cheese blend (4oz)

Directions

In medium saucepan, mix beans and salsa. Cook over medium heat until thoroughly heated, stirring occasionally. In medium nonstick skillet, heat oil over medium heat. Cook bell pepper and onion in oil 1 to 2 minutes or until starting to soften. In medium bowl, beat eggs, milk, salt and pepper. Pour over bell pepper. Cook until eggs are set but still shiny, stirring occasionally.
To assemble, spoon beans on lower part of each burrito shell, 2 inches from bottom. Top with eggs and cheese. Fold bottom up over filling and fold sides in. Roll up completely. Cut in half to serve.

Tip: Serve with additional salsa and sour cream if desired. If burritos cool off during assembly, just cover each with a paper towel and microwave on High 15 to 20 seconds.
