Place onion, garlic, cilantro, parsley, lemon juice, curry powder and cumin in food processor bowl. Cover; pulse 3 or 4 times or until chopped. Add beans. Cover; pulse 2 or 3 times or until beans are finely chopped but not smooth. In medium bowl, beat egg. Stir in chopped bean mixture. Stir in 1/4 cup of the breadcrumbs. Shape mixture into 4 patties, 4 inches in diameter. Coat with remaining 2 tablespoons breadcrumbs.
In medium skillet, heat 1/4 inch of oil over medium heat. Cook patties 3 minutes on each side or until golden brown, crisp and interior temperature is at least 165°F. Drain on paper towels.
Tip: Mix mayonnaise with your favorite hot sauce to make a spicy dipping sauce. Serve these patties in sandwich buns with lettuce and tomato and the mayonnaise sauce or with a side salad.
