Ingredients

  • 1 (15.25oz) can S&W® Kidney Beans (drained, rinsed)
  • 1 (15oz) can S&W® Black Beans (drained, rinsed)
  • 1 (15oz) can S&W® White Beans (drained, rinsed)
  • 1 (15oz) can tomato sauce
  • 1 (8oz) can tomato sauce
  • 1 pound turkey kielbasa, cut in 1/2-inch slices
  • 3 carrots, sliced (about 1 1/2 cups)
  • 1 medium onion, halved lengthwise, sliced (about 1 cup)
  • 1 cup reduced sodium beef broth
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons dried thyme leaves
  • 2 garlic cloves, finely chopped

Directions

Heat oven to 375°F. Mix all ingredients in ungreased 3-quart baking dish or casserole. Cover; bake 50 minutes or until hot and bubbly and carrots are tender.

Serving Suggestion: Serve this cozy casserole with hot whole wheat dinner rolls and fresh fruit to round out the meal.

Variation: For Slow Cooker Cassoulet – mix all ingredients in 4 to 5-quart slow cooker. Cover; cook on low heat setting 4 to 6 hours or until carrots are tender.
