Ingredients

  • 1 cup uncooked basmati or long grain white rice
  • 1 teaspoon finely grated lime peel
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 (15oz) can S&W® Pinquito Beans (do not drain)
  • 2 cups shredded rotisserie chicken
  • 1 medium tomato, chopped
  • 1 medium avocado, peeled, sliced

Ingredients

  • 1 cup uncooked basmati or long grain white rice
  • 1 teaspoon finely grated lime peel
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 (15oz) can S&W® Pinquito Beans (do not drain)
  • 2 cups shredded rotisserie chicken
  • 1 medium tomato, chopped
  • 1 medium avocado, peeled, sliced

Directions

Cook rice in 2 cups water as directed on package. Fluff with fork and stir in lime peel, lime juice and cilantro. Meanwhile, warm beans and chicken in small saucepans or microwave. Divide rice among 4 salad bowls. Top with beans, chicken, tomato and avocado. Top with other favorite toppings – green onions, sour cream, salsa, shredded cheese.
